What should I be looking for regarding windows/doors

About to begin finishing (self-build) an unfinished house we recently purchased, just waiting on the retention of planning and self-build insurance to come through. Plans and design almost ready. Unfortunately we are clueless about windows.

It's a big house on a great site. We are looking at:

    - A large front door
    - 2 separate side doors
    - 16 'regular' windows
    - 2 sliding doors almost 6m long x 2.5/2.7m high (one half of one of these sliding doors will have windows rising up from it to roof level and into section of the roof and upstairs bedroom
    - 1 square french window 3m x 2m for another upstairs bedroom
    - 1 single conventional simple sliding doors.

As you can see there's a fair bit involved.

We need quality, especially with the 2 large 6m sliding doors as these will be facing South as will the regular sliding door. We have extremely heavy winds from the south so we will be wanting triple glazed alu-clad for these I'd guess.

We are about to visit a few showrooms to start getting quotes and are wondering what specific questions we need to be asking these companies? (ie. guarantees and warranty's, certifications needed, after care and maintenance, regulations etc.)

In most likelihood the house will have UFH on ground and first floor operating off air to water heat pump, will be heavily insulated and finished to a high spec.

Any help regarding what to look out for with Window Suppliers would be greatly appreciated.

You seem to have a lot covered already. Only thing I didn't see you mention was U values.
Part of the building regs is that you need to get a provisional BER assessment done for your house (before building). This gives a BER rating that you're going to aim for with the build. One of the key components of this is the U values for the windows and doors. I suggest you get the provisional BER done before you go window and door shopping so you can make sure the doors & windows you are buying comply with your BER.
And ask them will they be able to provide U value certs with the windows + doors (one window supplier I looked at was unable to supply this, put me off him)
