I just got a new bike which came with 11-speed aksiums. If I wanted to swap those wheels with some older 10-speed mavic r-sys, can I just swap the freehubs over? Or is it more complicated than that? Thanks for any help.

You will not need to change anything, all Mavic road freehub bodies since about 2005 are capable of taking an 11 speed freehub (its a relic of when Mavic themselves were making cassettes).

Swap the cassettes over (if needed) and you are good to go.
