This is the second time using Parcelforce via eBay and the first time my parcel I wax suppose to receive was sent to Tennessee USA and once again my new purchase seems to be messed up again. It's saying it was delivered and signed my someone in Nottingham UK. I've tried contacting the seller on eBay and won't reply
    Absolute joke

Are you getting shipped to Ireland or UK address? do you know if sellers are writing the wrong address or forgetting to include Ireland? Contact seller as he should be who should contact ParcelForce to investigate the issue. Is seller active in ebay listing new items? If he doesn't reply after a couple of days open a Paypal dispute, in most cases that will get the seller to at least reply to your mails. (do not close Paypal dispute until you have the item or refund, once it's close you cannot reopen it open a new dispute)

Are you sure that the seller is legit and is not just giving you random parcel force tracking numbers?

If the seller is a business you should get an automated mail from parcelforce telling you both their tracking number and that of GLS which is their Irish last mile agent who will do the delivery.

I get a lot of parcelforce and it's usually fine, so would suggest you make sure that your seller is legit.
