I recieved a letter from sky to let me know that my bill will be going up by €2.50 per month.

Does anybody know if the 30 days to cancel my subscription work in this instance>?

You havent indicated if you are under contract or not but it will be 31 days notice even if you are out of contract.

Have a word with the Sky Reps in their Talk To forum as they might make you some sort of an offer.

They cover price increases in the t&c's of the contract, you can't cancel until the contract is up.

Are you sure? Usually a price increase means you can exit a contract. Otherwise they could increase it to any number and you'd be obliged to pay.

How does that work? Price increases usually are a change in contract terms meaning the contract is void.
The customer usually has 30 days to raise this issue or it's taken that it's been accepted and the contract then continues.

Surely their contracts for x services for y price don't have a caveat that they can change the price at anytime?

Cant remember the exact phrase, but its something like "by entering into the contract you will agree to a price rise within 12 months"

Best thing is to read the T & C's.

But to summarise the issue at hand Sky can increase the price once during the the minimum period i.e. the 12 month contract by a maximum of 10% but no increases will apply during the first 60 days of said contract.

Its all there in black and white.
