Flights: Only ever use the airline sites. Don't use the likes of Vayama, eDreams, GotoGate etc. If you look at the Tripadvisor Air Travel Forum you will see endless horror stories about them.

Hotels: booking.com is good.

+1 for booking. com Tripadvisor is good as well. Never used both of those for flights booking.

Used Vayama for return flights to India and Turkey last month, with no issues at all.

I echo booking.com for hotels, and the more you use it, the more perks you unlock like late check-out, discounts, welcome drinks, etc at certain hotels.
