Can anyone point me in the direction of any cases on non competes being enforced out of the jurisdiction of the original contract? I'm specifically interested in how large global companies (try to) enforce covenants on employees moving country and how it interacts with the usual governing law clause in a contract

If it amounts to a restraint of trade there is copious amounts of case law all of which I've forgotten! Basically they aren't liked and receive very strict scrutiny. Google restraint of trade or if you have access to Westlaw or similar there'll be a few articles on the subject.
