Was driving my car and coolent light came on and drove an extra few miles to my house because where I was, there was no stops for water! Let engine cool for half hour then topped up with water. Drove 8 miles and when coming to my destination, something happened to my car. Now it won't go into gear and when I put foot on clutch, its just loose and nothing happening.

Either your clutch is gone, or clutch linkage (f.e. cable) is gone.
This has nothing to do with the engine overheating you experienced earlier.

I done the test of taking off in 2nd and 3rd gear recently to check the clutch and it took off OK. Now I don't know much about cars but a mechanic once told me this is how to check your clutch however how true it is, I don't know.

When violent light was on, I was hearing a noise either from the engine or clutch. I know the coolent isn't anything to do with clutch but when a clutch goes, does it make a noise just before it goes?

That tears it. I don't know what a "violent light" is, but I'm getting one for the car for Christmas! :D
