Pilot! Or sailor. Sailor would take longer though.

Anything really? If you want to emigrate, you want to emigrate.

When I was travelling Australia/New Zealand with my girlfriend (now wife) she always found it easy to get a job as a barber.
I work in I.T and there was always plenty of work there too but the wife's job was very useful as we would just arrive somewhere and she would have a job within a couple of days.

There is a list online that will tell you all the jobs that are in demand in Australia and one for New Zealand too. You need to go on the official government pages. Its called the skills shortage list.

But usually things like Nursing, engineer, trades are basically all in demand

I met a guy who worked his way round as a barber! He'd travel to small outback towns that didn't have one, and set up in the local hotel. Once word got out, he'd have several days solid work with lads coming from miles around.

Being a barber won't help someone emigrate to Australia as it's not on the skills list.
The OP should pick a career based on what he wants to do for a living rather than just doing something just to get out of Ireland. Getting any sort of qualification that will enable someone to emigrate will take years plus most countries will not accept an applicant with no experience.
