Tyre size advice

I spotted some damage on a tyre on my MTB this morning. It's like something scraped all along the sidewall on one side. This would point at a misaligned brake block or the like, if I didn't have disc brakes, but I do, so I don't know what caused the damage!

Anyway, the problem is that the tyres are absolute pigs to get on and off the rims. Snapping tyre levers all over the shop. I think that there is something I missed when I picked the tyres I have right now and they just don't fit right. The rims are 26in MTB rims, but what is the magic information I need to discover to pick new tyres that will go on and off the rims without me swearing too much?

I'm using slick tyres by the way.
