In the UK there is Now TV, but they haven't launched that here (though they may do so in the future).

Sky used to offer a standalone Sky Go subscription, but they have stopped that, and it is now only available to Sky Digital subscribers.

I've changed to Sky, but when I was with UPC it didn't used to be the case that taking a premium channel would trigger a new twelve month contact - used to be only a two month minimum. Maybe check that out.

The annoying thing with Sky Sports on Sky Go is sometimes you can be around 2 mins behind the live broadcast. Might not be a big deal for most people but if you use social media during games or have people texting you about the game, it can have a bit of an affect. I find the Sky Go on PS4 is pretty much in real time though.

Sky Go on the Xbox is very good, if you have one.

Definition is excellent & tracks smooth.

If you have a family member using Sky Sports, you could use their Sky a/c through the xbox

yeah, that's what I do, my brother has Sky and he lets me use two devices on his Sky Go, I've a laptop that I plug into the tv to watch, and also a tablet that I can use on the go.

Presume you need to be signed up to the Sky Sports package to get the sports on sky go? I have Sky TV but no sports package.

It will mirror your tv package. ie. No Sky Sports on tv means no Sky Sports on Sky Go.

I neglected to mention one option. If you have a smartphone, it is possible to subscribe to Sky Sports on it for €12.99 per month (though I gather there is some sort of special deal for Vodafone customers). To the best of my knowledge it is the only way to get a standalone Sky Sports subscription without getting a basic pay-TV package. Wouldn't be the best way of watching though.

Two things I noted recently with Sky Go...

    - If you're using a rooted Android device, forget it.. it won't work as Sky lock those out

    - If you're using a laptop it will IF you use Internet Explorer but not Chrome. Firefox is supposed to work, but I never managed to get it to do so.
It will also work if you then connect the laptop to TV via HDMI BUT NOT if you're using screen mirroring. I bought a Roku Streaming stick that will perfectly mirror my Desktop and every browser window on it, but Sky Go will fail to play which I gather is also deliberate.

Very annoying how awkward they've made it even for legitimate tech-aware customers

We need Now TV to be available here, it would be ideal for one-off events (£6.99 for one day) or golf (£10.99 for 7 days). Is it being blocked here by UPC's licensing deal with Sky or what's the problem?

Currently you have to pay over €40 p.m. to UPC to watch Sky Sports and help the inflationary spiral of Premiership footballers' wages - no thanks!

No, the simple issue is that Sky simply do not need to launch it here. Now TV is aimed at pay-TV refuseniks who might want to subscribe for shorter periods or "event" programming. However we have a massively higher rate of pay-TV take up here than they do in the UK, due to the historic situation where you needed pay TV if you wanted to watch anything other than RTE (unless you lived near the border). In Ireland it's not about converting refuseniks, it's about poaching customers who are already happy with the idea of pay TV from the competition (UPC and Eircom).
