I was looking at tickets to the US and noticed that one of the Flight options for Aer Lingus had Operated by Air Contractors. So this basically means that Aer Lingus have leased a 757 and re-branded it? Will it have Aer Lingus pilots flying them as well?

This has been up and running for over a year or so now. There are 3 operating in EI colours, the flight deck will all be ACL but some are on secondment from EI for 3 years.

You will notice no difference to an A330 flight, cabin crew are all EI etc as said above the pilots have a different employer and that's it.

Yeah but its only a short flight tbh. Been on the Business Class 3 times now and the seats are fine and dandy. Ex Virgen Seats Lingus service the same Economy fine too twice to Toronto and seats/space fine, but if youre relying on airline food for sustinence Id eat at home or in the airport. I still chuckle when i read CS reports on complaints about food! Mainly Irish and ML Europeans complaining. Its not a restaurant, its a bus! No wifi yet but watch this space!

I partially agree. However I remember when the food on EI was pretty good relative to others. Over the last few years it seems to have gone downhill.

And with the rise in connecting traffic on EI and the hassle of security it is now harder to take food with you when you travel.

You say you have been in J Class, thats fine. Food will always be nice there. But have you experienced a middle seat in Y Class on the B757 on a flight?
