How thick should pastry be?

    Hi, I want to make an apple tart. My dad hates lumps in his so was gonna stew the apples first. How thick should the pastry be? Actually does stewing the apples make the pastry soggy??
    If anyone has a fool proof recipe id be grateful

    As for how thick the pastry should be, about as thick as a 2 euro coin is what I aim for.
