A 2003 diesel Saab will be the old GM 2.2 TD unit. That engine is rough as a slapped arse, noisy and outdated. The newer Fiat 1.9 from 2004 on wards are much better.

But mechanically is there anything in particular I should look out for?

The tax on a 2.2 is high. They also give trouble with the oil, it turns to sludge and is expensive to get fixed. Go for one from 2004 onwards.
I have a 2007 one for last 2 years. Only thing I had to get done on it was the front link arms. I changed oil and filters myself which is handy enough. Also changed the wheels from 17 inch to 16 inch. Much smoother now. Low profile tyres are not suitable for irish roads.

thanks for the feedback, if the car has been looked after with regular servicing i presume the oil should not be an issue?

The oil problems are only on the petrol cars

Advice needed....Ok, so i went to view the car last night, its in good nick, serviced in march, nct just up, i took it for a good spin, drove perfectly, the temp gauge was sitting at half way all the time, would this be normal? the engine felt very hot, would that be normal also?
before i brought the car back i pulled in and stopped and started it a number of times, it took a little bit before it started but nothing overly long, so then i pulled back into the guys house, i lifted the bonnet and all of a sudden the car started to rev itself a number of times before cutting out, the guy went to start it and it started ok, any idea what this might be?

    Merged.

OP, it could be anything, small or big.
Go see other cars instead. No need to spend money on a car you have doubts about.

Best have a mechanic inspect the car as it could anything from something small and cheap to fix to something that will break your wallet.

OP, seriously, there's loads of Saabs out there for sale. This one seems like a lemon. Leave it for someone else to suffer.
