Cavity Wall/Foundations

I'm going to be building a single story extension out the back of the house, I'm only building two sides and using the existing house for the other two sides, it's for a storage area so I've done some research and just wanted to get some feedback for the foundations.

The cavity wall itself will be 100mm x 50mm (cavity) x 100m based on what I've read I was going to make the foundation 750mm wide and 250mm deep.

Now my question is how far down from the ground level should the top of the foundations be, I've read multiple different answers which say the width of the cavity wall at minimum(250mm) or 400mm or even 600mm??

One other side question, what are peoples feelings on rock wool as insulation or should I be using insulation board?

    Thanks in advance.
