Have a new Audi its Red non metallic. When I got it a few weeks ago I decontaminated it with IronX and followed by a claying. Put AG HD wax. Its was weekly via 2 bucket method via Chemical guys maxi suds. Just wondering what sealants would work well with that colour?. Am I correct in saying that because it's new I dont need any polish

I would say polish away. It can only make it look better.

The regular way would be to put on the sealant before wax.

Polishing will undo the effort put into applying the HD Wax, but if you want to polish, then apply sealant and then wax.
AG HD Wax is a superb wax, and its sufficient on its own really. Durable and looks very well. On red, I think a sealant would be taking away from the wax, as waxes are usually more suited to that colour than sealants.
Sealants give a sharp glassy appearance and work well on whites, silvers, etc...but waxes give the wet look and red needs the wet look, IMO.

While you are on the subject what would be good for my dark grey car? :)

One of the best Ive seen on dark grey / gun metal grey is Bilt Hamber Finis Wax - really makes it pop if its metallic and the beading is not bad either! :)

You might find this an interesting read; as might others! :)

Thanks. Would I need something under/over that?

Depends on your paintwork and whether you feel it needs something to hide defects (if you are bothered about them)
As ever, it will work best and last longest applied directly to the paintwork. It will have some filling ability too.
