    I don't understand which is correct. Can someone help me?

    Él tiene un huevo pero no lo está comiendo
    Él tiene un huevo pero no está comiendo lo

    I'm trying to say, 'He has an egg, but he is not eating it.' (as a weird example).

    Both forms are OK. Just one tiny correction...

    Él tiene un huevo pero no lo está comiendo - OK
    Él tiene un huevo pero no está comiendo lo - ALMOST OK

    Él tiene un huevo pero no está comiéndolo. - all you need to do is tack the object pronoun onto your gerundio, and put an accent on your stressed syllable, since the addition of another syllable has made this word into an esdrújula (stress on the antepenultimate syllable, and always with a written accent)

    BTW, you can't do this tacking on trick with past participles, only gerunds.
