I think its about time to upgrade my PC. I built it just over 3 ish years ago so i feel its time for an upgrade.

Only looking to upgrade the GPU right now.

    Here's my build:

    Ram - 8GB-Kit G.Skill RipJaws-X
    CPU - Intel Core i5-2500K
    Mobo - ASRock Z68 Pro3
    GPU - Sapphire HD 6970 2GB
    PSU - XFX PRO650W

My budget is €300 but will go over if need be. I haven't been following what's out GPU wise but i'm hearing good things about the GFX 970? I'm planning on ordering in December.

    Any help would be great.

Yep it's highly recommended. Most people will point you towards this or if you want to go less than €300 there's some great deals around on R9 290's.

Nothing needs upgrading but your card.

As has been said, the 970 is an excellent card, but R9 290's have taken such a huge drop that in my opinion they are the best option out there - certain models are within 5% of the faster 970's and €80-100 cheaper.

They do consume more power though.

If i'm going from AMD to nVidia do i just uninstall the AMD drivers and then pop in the nVidia card and install their drivers?

No. If only it were that simple! You must sacrifice a goat upon a candlelit altar in a pagan ritual in honor of Nvidia corporation.

Will a Sheep give the same results?

Many a Voodoo FX owner asked themselves the same question.

Gtx 970 would probably be the best card to go with on that budget
