Recipe for using pork chops

    I have been given 3 pork chops that have already been frozen and defrosted yesterday so they need to be cooked today or tomorrow at the latest. Going out for lunch today so not going to get eaten. Just wondering if anyone has a recipe that I could use to cook them off and freeze them after? Has anyone ever used pork chops in a sweet and sour? I'm concerned that if I just cook them as they are and try to reheat them at a later stage they will be very dry. Whereas something like a sauce would overcome that...
