I don't think Michelin starred hotel is a thing in Ireland, seems to be only found in the UK. We do have Michelin starred restaurants though if that's what you mean?

Yep, there are no Michelin hotels in Ireland, just Michelin restaurants. The only hotel that I know of that has a Michelin restaurant on the property, is the Lady Helen Dining Room at the Mount Juliet resort in Kilkenny. That may be an option for you, as long as you travel at a day/time when you can avoid rush hour traffic on the M1 & M50, as well as the roadworks at Newlands Cross on the N7

Both The Merrion and The Cliff House Hotel are hotels with Michelin starred restaurants. The former has two, the latter has one.

Right you are eternal. Totally forgot about them.

OP, Bon Appetit in Malahide has a Michelin star. It's not so posh La Brasserie restaurant also has a Michelin gong in the 'good grub under 40 smackers' Bib Gourmand category. You could probably get to Malahide in under an hour, depending on where in Louth you are coming from. The Grand Hotel is right in the heart of Malahide. It's not exactly mega posh, but its only a 2 minute walk from Bon Appetit, so you can't beat its location. If you are coming down for the weekend, there are also lots of great non food things to do in the area....walk along the coast road, or the beach, visit the marina, check out Malahide Castle, do some shopping in Avoca, or the boutiques of Malahide village itself.
