Ex employer owes money

A company that I used to work for owes me money.

I was given a pay increase but when I got paid it wasn't in it. This went on for a few months and eventually they said they didn't the money yet but would pay me it all in a few months.

So a year later and still no increase. I end up leaving the company because of other reasons but I'm told I would be given all money owed to me. They never gave me my pay increase or holiday pay.

They have only responded to a few of my correspondence. In the last few we discussed how much they owed me and tried to come to an agreement on the sum. But now they are ignoring me.

What options do I have and what would you recommend?
