Can anyone recommend an external hard drive that users can plug into their laptop via USB or ethernet which will automatically backup a specific folder or type of file e.g. all Excel or Word files, and can be used across multiple laptops, Windows and Mac? Needs to be REALLY simple :D

If you want it to be really simple, using an online backup source like Google Drive / Dropbox or OneDrive. Each laptop (Windows or Mac) will have the software installed and once a file is placed into the folder (e.g C:\Users\Quenching\Google Drive\Documents) it will sync to all other devices. You don't need a large potentially unreliable hard drive with small office documents - this is easily the best option for you.

Read up on creating a 'autorun.inf' file on the drive and running a dos batch file to perform the backups.

Thanks, and might be OK for some machines, but not all have internet access and some might have quite large video files.

Thanks also but needs to work on Macs as well as Windows machines.

What I'm looking for is an external hard drive that users can just plug their laptop into and it will backup certain folders or files, with no interaction from the user other than an initial software install of backup software if even that.

Have a look at freefilesync. Its cross platform and you could create desktop shortcuts to perform the backups.
