Make ahead vegan lunch ideas that aren't soup

    Title says it all,

    I'm looking for ideas for lunches that I can make ahead, possibly in bulk, that aren't just stews or soups.

    I'd love to have sushi for lunch, but not sure how long it would last in the fridge.

    I'm just stuck for healthy lunch ideas really.

    Sushi as in fish? Not very vegan.. But if that's what you mean either way you could make it up and freeze i,then take it out night before.

    Things like lasanga, curries, salads, etc are all good bulk meals that suit lunchtime.

    Vegan sushi, basically rice rolls stuffed with avocado, tofu, red cabbage, any kind of veg really :)
    If rice freezes ok then I might make up a few rolls and freeze them.

    A big tub of quinoa salad might be good. Maybe fruit salad too.

    My problem is I have lots of time at weekends but not much in the evenings, so I want to be able to just pack a few made ahead things in the morning.

    It would be wiser to assume if someone asks for vegan lunch ideas that they definitely don't mean fish!

    I really like bean/pulse salads lately. You know the fancy ones you get in marks and spencers, I try to copy those :o Something like cooked split peas, lentils, edamame beans if you can get those where you are, cook them up, rinse in cold water, mix in some rocket, maybe some nuts, make a dressing, again I like them to have the slight sweet taste like M&S ones but they mostly use honey. You can replicate that taste by using a mix of olive oil, balsamic and a touch of agave or maybe maple syrup, some spices like cummin, curry powder, but anything goes. Sushi is ok made the night before, but it doesn't really keep that well for long in the fridge, especially with avocado in it. I've never tried freezing it though so I can't speak for that.

    Ideally I would bring a mix of a few things for lunch, some homemade energy bars/flapjacks or something, make a go of them at the weekend and have them in the freezer, ohsheglows has some nice recipes for those things from what I remember.

    Hoummous and pre-cut veg for dipping.

    I'll be honest, I lived so near the uni this past year that I really didn't bring packed lunches, I'm guessing soon though I'll have all sorts of ideas :P

    you are referring to sashimi orchidsrpretty, sushi mainly refers to the rice.

    I need this thread too! I always just make rolls and sandwiches with the odd stew thing.
    I like the idea of my own burrito bowl. Or maybe vegan platters, quinoa/hummous/chickpeas/avocado etc
    I gues just a bunch of stuff I could put on a plate and eat that would be tasty.

    usual things of curries, bolognaise etc
    Or maybe something like the noodle boxes you get in town would be really nice, some noodles, fried veg, soy/ginger/peanut sauce.

    Should test freezing and fridge etc. Id the nori goes weird you could always freeze the filling and then wrap it when you want to use it. Dunno if the rice would go weird.
