What would be an appropriate donation to enclose with a thank you card to a COI clergyman after taking prayers at a repose the night before a funeral? Any thoughts?

Short answer, what ever you think appropriate.
Perhaps you might wish to speak to the local verger to ask what ever is there traditional appropriate response; cash, a charity donation or otherwise.

It would be unusual to make any sort of donation to an Anglican minister if the deceased was a member of the congregation. All part of the service (no pun intended)
