Anyone know what happens if I go over the 30 gig limit on UPC?
    Does it just stop working?

As far as I know it will not stop working but they send an email or letter to let you know your limit has been exceeded and if it happens again I think they can automatically bump you up to a higher use package and start charging you more so just be careful about how much you use. Keep a check on your usage through the MyUPC account.

They basically migrate you to the unlimited version of whatever you're on now.

According to their AUP - http://www.upc.ie/terms/usage-policy/
Impose a charge of 3 cent per megabyte or part thereof for exceeding your data transfer limit; and/or
Upgrade your package to a package with a higher data transfer limit with the corresponding higher monthly fee; and/or
Downgrade your upload and download speed for a period of one month to dial-up speed, with your monthly fee remaining the same; and/or
Suspend your access to the services for one month, with your monthly fee remaining the same; and/or
Terminate your account for non-compliance with the provisions of this User Policy in accordance with the provisions of UPC‟s General Terms and Conditions.
Usage restrictions and data allowances for Limited Broadband Products are set out in the terms and conditions for these bundles. By subscribing to a limited bundle you are choosing a UPC product that has a usage cap. It is a condition of this product that you adhere to the usage cap. Where you do not adhere to the usage cap we will automatically upgrade you to the nearest bundle that best meets your needs subject to the notification provisions set out in the terms and conditions for that bundle.

That's not up to date. Ie it applies to older products with fair usage limits.

You could ask the reps in the UPC forum to clarify the position for you.

The OP stated that they have a 30GB so I assumed that they are on the current Limited package.

They are, so in this case the

"Upgrade your package to a package with a higher data transfer limit with the corresponding higher monthly fee;"

    ...is what applies.

Limited Broadband services: These services have a monthly usage allowance of 30GB. If you exceed the usage allowance in any month we will automatically upgrade you to the nearest pack that best meets your needs. Before upgrading we will:
    - Send you an email or text message notifying you the first time you exceed the allowance.
    - The next time you reach 70% of your allowance we’ll send you an email or text message letting you know that you are close to exceeding your limit again. We won’t communicate with you thereafter about your usage. We suggest you monitor your usage using the tool available in My UPC.
    - In order to send you these notifications you must provide us with a valid email address or mobile phone number when buying this service. For further details on how we may use your email address, or mobile phone number please refer to our Consumer Privacy Policy.
    - If you exceed your monthly allowance on two occasions we shall automatically upgrade you to the Broadband pack that best meets your needs.
