I've never been employed so I can't bring a wage slip, I know my ppsn but don't have evidence of it. I also don't have a bank account. The only thing I can think of that could come close to 'evidence' is my ppsn listed on my biographical details on UCC portal, any ideas?

Social services card, something from revenue like a tax credit cert (don't need to have worked for this), medical card or drug payment card.

You can also ring up the Dept of Social Protection and get them to send you out a letter verifying of your PPS number. I believe that will also suffice as proof of your PPS.
