    Medium rare please, not much blood, but still nice and tender.

    Medium well. Still tender and a bit pink in the middle, but fully cooked through. I have major issues with anything less, it just creeps me out. Loads of pepper sauce and sweet potato fries with it and I'm in heaven.

    A blue steak takes quite a bit of time to prepare. Much longer than even a rare steak, due to the method by which it is cooked. Very few places actually cook a blue steak.

    Steak has to be ate rare.

    It really depends on the type of steak. There's this perception in Ireland that the best steak is the fillet. I'd agree that it's a cut best served to being cooked rare. In Germany we have a wider selection of cuts served as steak. Much of the meat is Irish actually. But the idea that you'd have a rare ribeye is laughable. The fat doesn't even have a chance to render and breakdown if getting it ordered rare. Same for the onglet or a hanger.

    Its not actually blood, most of that is removed during the slaughtering process. Its caused by water in the meat mixing with a protein present in it, which gives the juice on the plate its colour.

    Once steak is cooked to a certain temperature is safe to eat. After that its a mater of taste, be that well done, medium, rare, or even blue.
