Speech Audio to Text programs/apps

    is there any programs available for my laptop that
    1.will record the text of a video(either youtube or mp4 file player in windows media player)being played on the laptop as it is being played that i can download.
    2.Or is their an app for iphones that can pick up the text of a video being played on the laptop properly
    3.An iphone app that works in the background while a video is being played on the iphone

    Any help would be much appreciated
