Flapjack recipe?

    Hello... Anyone got a recipe for flapjacks that is good? I find that mine are never goo, fall apart in fact, and want to make some for ROK!

    These are nice, very sweet though. If you don't want them to fall apart, press them down hard with a fork before they go in the oven.

    These are pretty damn tasty and packed full of energy
    -boards won't let me post link, just google bbcgoodfood healthier flapjacks

    (I haven't a clue what agave syrup is, I use honey instead)

    As suggested above press the mixture down with a fork before putting in the oven and score them into the portion sizes when they come out of the over but leave them to cool before taking them out of the baking tray

    Below is the recipe I use, find it great.
    I use sesame seeds as well and use mixed fruits sometimes instead of the 125g raisins and 100g cranberries. The coconut can be a bit strong too so I’ve dropped that for Goji berries and mixed nuts.
    Condensed milk is the only (really) bad thing, but it's the glue that sticks it together so has to be used. Instructions for baking it in the link.
    Bored one night and worked out the calories, about 4500 per tray, so about 450 for a good slice.

    Odlums

    Ingredients

    300g/11oz Odlums Harvest Fruit Porridge
    1x 397g Tin Condensed Milk
    125g/4oz Shamrock Raisins
    100g Packet Shamrock Flaked Almonds
    100g Packet Dried Cranberries or Blueberries
    75g/3oz Shamrock Desiccated Coconut
    2 tablespoons Linseeds

    not a flapjack recipe at all, but what I moved on to for long bike tours after getting bored with flapjacks is a sort of white soda bread baked in a loaf tin, cut into squares, split in two, and spread with marmelade or jam:

    Half a kilo of white flour (could be wheat or spelt or a mix), half a litre of buttermilk, a scant level teaspoon of bread soda, a large fistful of raisins, 2 ml of lemon oil. (This gives one loaf - it freezes, so make as many as you like but be warned, the lemon oil flavour comes through quite brashily. I really like it, but that may be just me.)

    Mix, tip into loaf tin, bake. I bake this at around 170 - takes a bit longer than it should but on the bike I prefer chewy to crunchy and/or crumbly. (I also use silicone loaf tins - easy to wash and they give a chewy crust rather than a crumbly one.)

    Sometimes I also make focaccia and top it with olive oil, salt and rosemary. Salty,herbaceous and - with jam - sweet. Peanut butter as well, if I really want to confuse my taste buds.)

    Date, apricot and walnut flapjacks.

    Prep time 5-10 min / cooking 15-20 min
    Cake tin and some baking paper / or lightly grease tin.
    Makes about 12 flapjacks

    75g butter
    2 tbsp golden syrup
    1 tbsp soft light brown sugar
    about 75g walnut pieces ( I normally chop them up really small)
    about 75g mix of dried apricots and date ( again I chop them small)
    200g porridge oats
    zest of 1/2 a lemon.

    1. Preheat oven to gas mark 3 / 170 c
    2. In a saucepan, melt the butter with the sugar and syrup on a low heat and, when the sugar has dissolved, add the fruit and nuts. zest and then the oats. Mix together really well.
    3. Put the mixture into a tin and press down firmly with a spoon.
    4. Throw it into the oven for 15-20 min until the top is golden or I prefer to wait until it gets a bit darker.
    5. Remove tin and leave to cool slightly. Mark out you squares with a knife and don't forget a taste test.
