Vegan Carrot Cake Topping

    I am having a vegan dinner guest in a few weeks, and I am finding dessert nearly impossibly because they all contain dairy/ eggs. I have settled on carrot cake since it is a nice, moist, tasty (hopefully) dessert.

    My recipe is quite moist, calls for chunky enough fruit and carrot so I am not overly worried about it being too dry or anything. It is very crumbly though, so may not be the prettiest.

    My big dilemma is what to serve in place of the traditional cream cheese icing? That contains butter, cream cheese and icing sugar. The first two are obviously out and I am still researching the sugar, so that may also be eliminated.

    Anyone have any suggestions? Am I entirely wide of the mark with the carrot cake? I have been racking my brain for something nice and this is the best I can do!:o

    I recently had tofutti which was tofu made into a cream cheese type product. I am neither vegan nor vegetarian but found it to be exactly like Philadelphia. Can you get a vegan butter and use these?
    Someone else might be able to tell you where to get those products.

    You can get vegan cream cheese in most health food stores. It's yum!
