I am currently looking for a job. I am currently minding my son during the day and doing casual work at night. Are there any legit work from home jobs that I could do to make money while at home during the day.

Very few that will be happy for you to be doing childcare at the same time as working.

I'm just talking about 2-3 hours per day, like an hour or two when my son is in bed for his nap and in the evening when my girlfriend is home.

2-3 hours is what you expect, but there will be days that demand more. What about if the child has a flu or tummy bug?

Sorry to say that its not easy to get a job that allows you to work from home, otherwise everyone would be at it.

In my experience, occasionally people can arrange it so they work a few days in the office and a few at home each week. Note these are not the norm, and are usually after the employee has proven themselves responsible to actually get the work done regardless of where they are located. I've seen this in IT but not really in other fields.

I see plenty of ads for work at home jobs but I doubt any are legit. Mostly for spending hours answering surveys and doing basic online stuff, but I doubt they pay well or at all.

Unfortunately unless you run a business from home you're not going to get someone to pay you for working limited hours at home.
If you had good IT/ engineering/ problem solving skills you could try contract websites like yet2, design bounty, innocentive and ninesigma?

I know of housewives who put ads in local papers to provide ironing services. Might sound silly but they advertise €2 per item so mightn't be too bad if you can find a few regulars to iron for.

Edit: I just read back my post and just realised this might come across as sexist but its absolutely not the case!

Some mystery shopping companies do telephone and online projects in addition to store visits.

Jesus, don't let my mother see this - no way I want to be paying EUR 2 per item.

Some mystery shopping companies do telephone and online projects in addition to store visits. You only apply for/accept the ones that suit. Might just tip the balance rather than give you a regular income.
