Fans can continue running after car is switched off to cool down engine.
    Particularly on hot days.

Thats normal is it not? Depends on how long it keeps running for, but from my experience when a car is hot the fan will remain on for a period of time afterwards to help it cool down.

Could well be the DPF regeneration cycle completing too.

Most likely what it is. Nothing really to worry about.

It ran for 15 minutes before I started it and turned it off again. Was only a short spin before that

Does it take take long to stop or do you restart and stop to turn it off

I never took notice really I just left it alone. After a short drive from cold it can often be extremely loud.
