Excellent family hotels in Ireland

I am looking for a really good hotel in Ireland which offers - Excellent family rooms (good quality) - Excellent Swimming pool facillities - Maybe lovely walks OR Parks in area also - Local area of good restaurants and cafes Or if someone could recommend a good area in Ireland to consider. Thanks so much

We have stayed at the Riverside Park Hotel in Enniscorthy a few times and love it.
