I have my trusty old iPhone 4 as a back up, my nexus 4 is off for repair so I am back to this iPhone, at the moment it has 5.1.1 on it but I also have shsh blobs for 6.3 and could of course go to iOS 7, but for speed and stability which would you pick?

5.1.1. For older hardware, the earlier the better.

Do you mean 6.1.3? If so, that's probably the best version to have in terms of speed and a sizable amount of apps support only iOS 6 and newer. iOS 7 is really sluggish on iPhone 4.
