When shares are sold, is the date on which the CGT is calculated, the value date or the execution date?

In the majority of cases it's the date of the contract. That's generally the value date.

I would actually expect the date of the contract to be the execution date; the value date is the settlement date. It's of little consequence unless it's in non € currency or spans a tax year. If it's in non € currency, the exchange rates between contract and settlement date are a capital gains calculation in their own right (although 90% of practitioners would not follow that through but rather use the settlement rate for the initial txn).
