I have a normal sky + box and have the optical cable connect to the tv Sony KDL40ex503. Should I have the optical cable connect to the sky box instead, would I get better sound?

Yes connect straight from the sky box. Most TV's only output 2.1 from their optical out from a HDMI input.

This is correct, the cheap sound card a tv contains usually does not have a licence to play Dolby digital.
