Healthy lunches you can prepare the night before?

    For breakfast I normally have either weetabix or porridge, two boiled eggs and two slices of brown toast.

    Im in college and in the mornings I dont have time to prepare lunch in the mornings.

    Ideally I'd like to be able to prepare a healthy lunch ( or 2 ) that would do me from 9 - 6 the next day.

    Double up what you make for dinner and have the extra for lunch the next day.

    I make lunches for work on a Sunday. Will usually do me until Wednesday and Ill cook something then for Thurs and Fri.

    I made a chicken tomato-ey thing for this week.

    I cooked two chicken breasts in the oven, nothing added.
    Also roasted two peppers; red and yellow, just for the colour.
    I shredded the cooked chicken, sliced up the peppers.

    I then heated a tin of tomatoes and added some mushrooms, the peppers and some herbs. I left this simmer for a while for everything to soften up.

    I then added the chicken and put into a big container for the fridge.

    As everything is left chunky its nice and filling.

    Get big lunchbox

    Chuck in whatever you like of the following:

    Chicken
    Cashew nuts/ walnuts
    Feta/ goats cheese/ brie
    Lettuce
    Cherry tomatoes
    Cottage cheese
    Cucumber

    Lunch is made. Nom.
