Happy New Year! I got a pasta maker for Christmas but haven't got around to using it yet. I'm looking for advice as to which type of flour to use. Does it require specialist flour or can I use any plain flour.I just watched a BBC Good Food video which recommends OO flour. I've never seen this on flour packets - but then I wasn't looking!

It's a specific type. It's called Tipo 00 usually. Roma do it and I think you can often get it in Dunnes, but I've never seen it in Tesco. Alternatively, most gourmet food shops will probably sell it.

Dove's Farm do a flour labelled as pasta flour.
Available in any whole food shop.

I have seen it in Tesco, but not recently, mind you, I haven't been looking.

Try Strong flour if you can't get 00, it won't be exactly the same but will be close enough (IMHO!). Much easier to get in my experience and a little less expensive than Tipo 00.

Ive used plain flour mostly to make pasta. The cheaper flours make a greyer pasta than the whiter spendier brands. All tastes good though

Tesco no longer stock Tipo flour :(
If you're in North Dublin Nolans or any of the Fresh Market shops sell it.

We got a pasta machine as well. It says to oil it before use. What oil do you use and where can you get it?

Fallon and Byrne in Dublin City centre sell it.

I tend to use strong flour if I can't get the oo flour, can't really tell the difference.

Superquinn sell Roma Pizza and Pasta Tipo 00 flour. I don't think it's that expensive. It was around 1.80 for a kilogram bag the last time I saw it there.

Otherwise as other posters have said, strong flour works well.

Thank you for all the replies/suggestions. I live near Drogheda and a trip to Dublin to buy Tipo OO flour just isn't warranted and the nearest Superquinn is in Swords. So in the meantime I bought a packet of Hovis Super Premium White Flour in Tesco and I'm looking forward to having a go this evening.

M&S will probably have it as well but someone might confirm.

Thanks Gloomtastic but I tried Marks in Drogheda today and no luck! It is a small branch though.

Tipo 00 is just strong flour made only from the centre of the grain so it is whiter. The important thing for pasta (and white breads) is that you use strong flour for a good elastic dough.
If you want to win Masterchef you'll probably need Tipo 00.

I use a mixture of Odlums strong flour and semolina (cheaper in health food shops) for my egg pasta

@gloomtastic try olive oil or some food grade oil but you'll need to run a bit of throwaway pasta through the machine afterwards as internal dust/grit/etc will often come out of it with the oil after oiling

Roma brand type 00 flour is available on Dunnes, Tesco etc.
