Well basically I'm not sure how this Garda Cert thing works.

I was convicted of theft when i was 18, many years gone now, and i have a couple of driving convictions for not producing documents to garda station within ten days.

when i got my cert, the conviction from 2008 was not on it ! only the driving convictions !!!

What does this mean ? does a cert show all of my convictions ? what should i do ?

The 2008 conviction is probably spent. Check with the Gards.

Were you 18 when the offence you were convicted of happened?
    child offences are usually discounted

Why does it matter? Are you proud of it?

It matters because I am not sure whether I have to declare it or not in the future.

Declare all convictions then, to be on the safe side...
