I'm about to submit a MED 1 claim for 2012 for Laser eye surgery and other medical expenses etc.
I have found most of my receipts but I can't find some GP receipts.

Can I submit a claim now for 2012 for the receipts that I do have to hand, and then if I find the GP receipts later can I submit a 2nd claim for 2012 for the additional GP receipts?

Also I'm going to submit them online using PAYE Anytime. Is there any way I can scan the receipts and email them to Revenue, or do I have to keep them in a box in the attic for 6 years?

You submit the claim based on the receipts you have. You can add addtional figures to your claim anytime within the four year period. You do not have to send receipts unless asked to by Revenue.
