what would this actually be called, would this be animation, graphic design, or what ?

Would there be any courses in Ireland teaching it, would you get a job out of knowing your stuff with this program.

Computer animation would be the term or computer modeling.
Not sure if any Irish colleges cover it specifically but it would be part of any courses that covered modeling or animation.
Probably included in game development courses as well.

Unless it specifically the typography your interested in.

awhh well thanks for the info, id be more into modeling and animation the typography was just a fun idea i came up with
