I'm looking to declare car off the road tomorrow (as its the last day)
and tax it for a year.
I will have no documents with me until tuesday, only my driving license.

Will it be possible to do it tomorrow if I just give them my car reg?

Haven't been asked for reg cert in a good few years when taxing car in person.

You know you have to get off-the-road form (RF100?) witnessed in a Gards station beforehand.

You can only declare it off the road up to end August afaik. You will have to tax it from 1st September.

    Expect queues!
