Home made buttermilk for soda bread?

    I've made buttermilk from cream, but what I got is very sweet, do I need to wait for it to sour before I can use it for soda bread?
    I'm making the bread with bread soda so I will need some sort of acid to make it rise.

    What method do you use to sour the cream?
    When i find i have no buttermilk i will sour some regular milk with some vinegar or lemon juice and it works grand

    I churned the cream to make butter, I could try some lemon. it is incredibly sweet like a pint of milk with icing sugar in it!
    I'm tempted to leave it some where warm and see if it spoils, I'll probably end up with food poisoning.

    No, no, no. Pasteurized milk or cream will not "sour" when left somewhere warm, it will go rancid.

    As was said before, use full-fat milk and add lemon juice to make instant buttermilk. I do it every time I make soda bread successfully.

    I had abandoned the buttermilk, after finding this wiki page http://en.m.wikipedia.org/wiki/Soured_milk

    could have been a disaster :o
