No earth in centre light in room but there is at wall lights.

What size earth single green/yellow would be ok to link up? Heard 1.5mm2 should be "not exposed to damage" so I'm confused what that means.

What size is used by electricians?

Size of the earth will depend on the phase conductor.
Lighting is generally wires in 1.5mm so a 1.5mm earth would be ok.
Is the light metal or plastic?

Exposure to mechanical damage an earth needs to be upsized but this is irrelevant in your case.
