No Contract?

I have a friend who works in retail and has been working in the same shop for the past five years. She works a 40 hour week and has been pretty much working the same hours since she started, however her manager has never given her a contract of employement.
It was verbally agreed what hours she would work. In the last two weeks or so they have started asking her to start later in order to cover the evening shift. She's reluctant to do this as that means a change to her hours and so far has managed to avoided working the evening shift.
As she has never had a contract and any hours or holidays have been verbally agreed can they just show her the door if she refuses to do what they ask?
