Beef Stroganoff Cream Question

    Hi,

    I'm making beef stroganoff for the first time tonight and I'm confused as to whether to use cream, double cream or sour cream??? Does it make a difference?

    Also- do you bring the cream to a boil and then simmer and serve?
    I've seen so many recipes and variations for it at this stage I'm just so confused!

    Creme fraiche or sour cream. Bring to the boil, reduce heat, then simmer til it's reduced to your desired consistency.

    Thanks very much Honey-ec. I bought cream and sour cream at lunch there but i'll just use the cream for dessert now instead:)
