Losing weight without calorie counting?

I am just wondering what people’s thoughts are on losing weight via calorie counting versus not calorie counting but just eating clean.

A little about me and my husband, we are both mid thirties, our diet would be pretty poor in general, a lot of white bread, sweets, biscuits and convenience food. I am lucky in that I don’t tend to put on weight (I also run a lot) but am feeling a bit lethargic at the moment. My husband is a bit more complicated, he needs to lose about 10kg, but he has Chrohns disease which effects his bowels/intestines/digestive tract. He is not supposed to eat a lot of fibre and it is recommended that he eat a low residue diet. He is having a flare up at the moment and I reckon 90% of that is down to his bad diet.

He has lost weight in the past using My Fitness Plan, but while it was good for getting his weight down, it wasn’t much good for his health as he was still eating rubbish and processed food, just making sure he came in under 1900 cals per day. I want us to try a months trial of a clean diet to see if his health improves, basically cutting out the white bread, processed food and junk and replacing it with more fruit, veg, lean meat and home cooking. I have been trying to explain to him about ‘good’ fats and that eating low fat mayo/yoghurt etc can be counter productive, but he is worried that he won’t lose weight if he is eating full fat things (albeit in moderation). He likes the control that MFP gives him, with regards to calorie counting, but I don’t think it teaches good eating habits.

So I guess my question is, do you find calorie counting the most effective way to lose weight? Or is a clean diet with moderated portions the best way to go.

Also, can anyone suggest alternatives to potatoes and pasta for dinner bearing in mind that he is supposed to follow a limited fibre diet, small amounts of brown rice etc are fine, but he wouldn’t be supposed to go overboard on the fibre.
