Advice on selecting and growing apple trees

    I'm getting some raised beds built in my garden and I plan on putting two small apple trees in them. Since they'll hopefully be there for a long time, I want to get it right. :)

    The beds will be an unusual shape, so the exact size is hard to give, but the area the trees will be in will be about 20 inches deep, 8ft long and probably 3 ft wide. I'll leave as much space between the tree as possible but they'll be either side of a chain link fence, so training them might be an option.

    Would I be right in thinking that M27 is the best rootstock to get? I've seen a few sellers listing M9 rootstock, but I'm not clear on what the difference is and which is better for my situation.

    As for the varieties - I like a crunch, juicy apple, sweet but with a slightly tart taste if that makes sense. I'd also like traditional varieties so I'm thinking of a Gibbon's Russet and possibly a Lough Tree of Wexford.

    Any opinions or recommendations?
