Smoking using woodchips - indoors

    HI,
    ive seen how to smoke fish at home using tea
    (Pan->Tin Foil->Rice->Tea->Rack->Trout->lid).
    I was wondering if it would be possible to apply the same theory using Hickory woodchips and chicken, steak etc?

    If you take away the concers of the food actually being cooked correctly, is it possible to get the hickory smoke flavour this way, and can it be done inside the house?

    I bought the woodchips for use with the BBQ, but interested in trying smoking food inside too.
