Depends on budgets and where she lives too.... but have been in

    Kilronan Castle outside Carrick-on-Shannon
    Winelodge outside Athlone
    Radisson in Caavan

Clarrion sligo with trip out to Voya seaweed spa a must
Aisling Hotel in Dublin beside heauston/luas for city viewing
Strand Hotel in Limercik has great pool/spa area

Get yourself onto http://www.dealpage.ie and search away. Updated often during the day.

Always hotels and stuff on it. I just booked the Fitzwilton in Waterford for my In laws for next week. €270 for 3 nights B&B and One Dinner.

However, I would like for somebody to give me a present of a weekend in The Ferrycarrig Hotel in Wexford.

What sort of thing is she into? Markree Castle in Co Sligo is a really authentic castle experience, no spa/pool etc but beautiful old building in a totally serene atmosphere, staff are really laid back and its something totally different.
If you're just looking for a general location I'd really recommend the north antrim/derry coast, around Coleraine/Portrush/Portstewart. Used to live there so can't recommend any hotels from experience but if its still there the Harbour Bistro in Portrush is fabulous for dinner. Anywhere over towards Castlerock or Downhill is beautiful too. And just an hour to Derry by car or train, maybe a bit over an hr to Belfast for shopping, Giants Causeway & Carrick-a-rede rope bridge, Mussenden temple .. its just a gorgeous place.

Depending on your budget, Castlemartyr Hotel is amazing in Cork.

OH and I stayed there for three nights and we didn't even leave the actual hotel grounds it is a really lovely place and something just that extra bit special. Amazing walks, great pool, fabulous spa, golf course (if they are that way inclined or just the clubhouse drinking wine looking out if they like us!).

The hotel does really good deals there too so you could be lucky.

The Marker Hotel in Dublin looks like a great spot. Also expensive too. What type of trip are you looking for?
