December is the high season in Thailand so prices will be very inflated and full to the brim with Aussies and Europeans, ko Samui and Phuket are the main tourist beach islands with smaller islands for them, with two weeks only I'd pick one or two areas and enjoy instead of trying to take in the hole country, when you decide we're you want to go and find a hotel that suits book ASAP.
Have a look at sites like tripadvisor ko samui/Phuket and sawadee.com to give you idea of hotels etc.

I'm sure people will have lots of ideas for you I did a trip a few years ago Oz NZ hawaii and Canada great times. What I will say is the first 4 weeks before you get to thailand will fly by and you shouldn't try to jam too many places in. Better to spend time enjoying a country than spending time in airports. You could easily do 4 weeks in a place like NZ or the east coast of Oz or you could mooch around south east Asia.
